8 points per serving
2 cups shredded cooked chicken breast
1/4 cup salsa
1 cup spicy black bean dip
4 (8inch) multigrain tortillas
1/2 cup (2 ounces) reduced-fat shredded monterey jack cheese
cooking spray
1. Preheat oven to 450
2. Combine chicken and salsa in a medium bowl
3. Spread 1/4c. black bean dip over each tortilla. Top each evenly with chicken mixture and 2 tablespoons cheese. Stack tortillas in bottom of a 9-inch springform pan coated with cooking spray. ( I do not own a springform pan, so I just put it on a pizza pan and it worked fined.) Bake at 450 for 10 minutes or until thoroughly heated and cheese melts. Remove sides of pan. Cut pie into 4 wedges. Serve immediately.

Spicy Chicken Fajitas
Points value: 7 points
add 1 point if you add 1TB of light sour cream or 1 Tb chopped avacado
6 skinless, boneless chicken thighs ( I just used two chicken breasts)
2 tsp. fajita seasoning
Cooking spray
2 cups vertically sliced onion
2 cups red bell pepper strips
4 96% fat free whole wheat tortillas, warmed
1/2 c salsa
chopped avacado (optional)
chopped fresh cilantro (optional)
Light sour cream (optional)
1. Cut chicken into 1/2 inch wide strips. Place chicken in a small bowl; sprinkle with fajita seasoning, tossing to coat.
Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add chicken and onion; stir-fry 3 minutes.
Add bell pepper; stir-fry 5 minutes or until chicken is done.
Place 1 tortilla on each of 4 plates. Top each evenly with chicken mixture and salsa. Top with avacado and cilantro, if desired. Fold tortillas over filling, and and top with sour cream, if desired. Serve immediately.

So I created this blog to share recipes that I have found that I like and that are low in points for weight watchers. I don't know how good at it I will be, but I am going to give it a whirl! So I am cooking something tonight and lets hope I remember to take pictures and stuff.
